Nutty Snack Bars

We are totally addicted to these little nut bars - which we made for the gorgeous and fun loving muddy puddles. They are packed full of protein and good fats, plus great for an instant energy boost.

100g ground almonds

50g nut butter (cashew, hazelut and peanut butter)

80-100g coconut oil

130g honey

150g mixed roasted nuts

10g chai and poppy seeds

50g raisins

70g dried apricots

50g dried cranberries

70g puffed rice

20g mixed seeds

Method

  • Pre-heat the oven to 200 degrees and roast the mixed nuts for 10-15 minutes until lightly golden.

  • Place the nut butter, ground almonds, coconut oil and honey into a saucepan and heat all together until melted. Once melted, add the other ingredients and mix well until covered.

  • Line a baking tray with silicone/ non-stick greaseproof paper and pour the mixture out. Press it down firmly and place in the fridge to set. When set, cut into bars and store in an airtight container – although we suspect they won’t last long!
