Fast Fish Fingers
These are a life saver when you are strapped for time, yet are keen to provide a nutritious meal for your family - they take less time than cooking pasta! Haddock (and all fish) is wonderful option for children. It is packed with useful protein, vitamins (such as B vitamins, particularly B12, which are key for energy production) and minerals (such as selenium & choline) which all help towards building healthy, happy little bodies.
I have coated these in a light crumb of less refined spelt flour, dried herbs for a really tasty, and speedy, teatime option.
Serves 2
150g fresh haddock cut into strips/fingers
3-4 tablespoons wholewheat spelt flour
1 tablespoon grated parmesan
a sprinkle of dried herbs - such as oregano, thyme, mixed
Method:
Simply place a non-stick frying pan onto the heat and add a knob of butter.
On a plate mix together the flour, parmesan and dried herbs.
When the butter in the frying pan has melted dip the fish into it to coat and then dip/ coat in the flour mix. When you have coated them all place them back into the frying pan and cook for a couple of minutes a side. They won't take long to cook and you can test they are done when they feel firm to touch and will flake away gently.
Serve hot and enjoy
