New Even Better Flapjacks

I wanted to try and reduce the amount of both butter and honey I was using in my last flapjack recipe and had a burst of inspiration to use dates for their natural sweetness

- it worked brilliantly, plus made them hold their shape even better.

The dates not only provide sweetness but wonders for the digestive system. The oats are full of energy boosting B vitamins and soluble fibre iron and the honey is a useful natural energy source and important minerals.

These are a constant in my house and freeze brilliantly too.

Makes 15-20 mini flapjack bites

100g dates

60ml water

100g butter

200g oats

100g honey

a pinch of salt

Pre heat the oven to 180

Start by making sure the dates dont have any pips inside and place in a bowl. Cover with the water and pop in the microwave uncovered for 1 minute. If you dont have a microwave you can do this in a small pan and want to heat the dates until they are softened.

Next add in the butter and allow it to melt into the hot date like mix and add the honey. Next with a hand blender blitz the mix until smooth.

Add the oats to the date mix and stir together.

Spread out into a roasting tray (lined with silicone paper or non stick baking parchment) so that the flapjack is about 1 inch thick.

Place in the oven and cook for 20-25 minutes.

Leave to cool slightly before cutting into squares.
