Don't be afraid of giving your children things with spice in them – they usually love it and it's important to give them different tastes and textures. Plus, spices are full of wonderful nutritional benefits: cumin is an excellent source of vitamins, coriander full of antioxiandants and disease-preventing health-promoting properties and turmeric a great anti-inflammatory.
These are really quick and easy to make, especially if you cheat by using pre-bought mashed potato which I always do!
You can easily adapt this recipe and add different vegetables such as sweetcorn, peppers, courgette and so on, and hard cheeses, such as feta, would work well too.
Cauliflower, Cumin, Pea & Potato Patties
Makes about 4 patties (enough for 2 kids as a side)
Ingredients
100g mashed potato
100g cauliflower florets, chopped up in to small pieces
30g green peas
1/4 tsp turmeric
1/2 tsp cumin
Seasoning
Method
Pop your peas and cauliflower into boiling water and cook for a few minutes until tender. Drain.
Mix the mash into with the pea and cauliflower and then add in the spices and seasoning.
Put a small knob of butter in your frying pan and when foaming take a little handful of your mix and make into a pattie shape and place into the pan. You want to hear a nice light sizzle noise and leave for a minute or two to get a nice golden colour. Flip over.
You can also adapt these and put fresh herbs in if you have them to hand; coriander, parsley and mint would all work very well.
For a more adult version, you could serve them with a nice drizzle of natural yoghurt mixed with a small amount of tahini, garlic (paste) and seasoning.
